Baked Parmesan Paprika Chicken

Happy day before Easter everyone!  When I was a kid our Easter lunch was always: baked ham, mashed potatoes, green beans etc.  Every year.  And every year it was delicious!
 
Speaking of other things that are delicious…..I love fried chicken.  I could literally eat it every single day without it getting old. (I won’t because I like having a functioning heart.)  But just in case I ever want to shake my chicken recipes up, I go to this guy.

Baked Parmesan Paprika Chicken

Ingredients:

1 egg
2 tablespoons milk
4 boneless, skinless chicken breasts
1/2 cup shaved parmesan
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons paprika
1/4 cup melted butter

(We eat well balanced meals and not just cookies.
Sometimes.)

Instructions:

Preheat oven to 350 F.  Coat a baking dish so that the chicken won’t stick.

Combine flour, salt, pepper, paprika, and parmesan in one bowl.  Whisk the eggs and milk together in another.  Dip the chicken in the egg mixture, then drudge in the flour one.  Place chicken in the dish and repeat with all four breasts.

Pour the melted butter evenly over the top of the chicken.

Bake for 1 hour and 15 minutes, until cheese is browned and chicken is cooked.
