Recipe || Funfetti Pancakes

Remeber the funfetti mix that you saved from your Cake Pops?  Well, bust that out right now.  It’s time for cake for breakfast, otherwise known as pancakes.

Occasionally Sam will look at Pinterest with me, and he’ll stop and point at a dish and go, “That! Make me that!”  This was one of those dishes.

(Between the 2 of us we took this whole stack down)

 
Ingredients:
 
1 1/2 cups funfetti mix
1 egg
3/4 cup of milk
2 tablespoons vegetable oil
funfetti frosting to glaze (optional)
 
Instructions:

Set your oven to warm as low as possible. Combine your mix, egg, milk and oil.  Stir together.  Heat your pancake skillet on the stove.  Spray with cooking oil.  Don’t try to make your pancakes too big.  Smaller ones work best here.  (Plus all our skillets are fairly small.)

 
Cook for about 3 minutes on each side, or until golden.  Place them on a plate in the oven to stay warm until all your pancakes are done.
(This is my kind of breakfast!)
 
If you’d like to try glazing them with some Funfetti icing, warm about 1/4 cup in the microwave.  Add in a dash of milk at a time until the icing has the consistency of a glaze.  Drizzle over the top as desired. Personally, I like my Funfetti pancakes best with a bit of butter and maple syrup in order to allow the sweetness of the pancake itself to come out!
