Recipe || Chocolate Oreo Crusted Cookies

I always feel the need for apologizing for blogging about Oreo inspired treats. Whatevs. I love them. Nabisco should look into sponsoring me.  (Yo, Nabisco listen up!) Awhile back Sam was having massive baked goods withdrawal now that I am not in the UK so I talked him through making these beauts. (Including how to use the handmixer…) But let the record know, I had made this cookies for him and he requested them again. Even if he had to go all the leg work.

Chocolate Oreo Crusted Cookies:
(The Leaning Tower of Cookies)
 
Ingredients:

1 cup flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
1/2 cup butter (unsalted)
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
12 Oreos, crushed

Instructions:

Preheat oven to 325 F. Whisk together flour, cocoa powder, salt and baking soda.

In a seperate bowl, combine eggs, vanilla, sugar and butter. Beat on medium speed until smooth and creamy. Slowly stir in the dry ingredients. When your cookie dough is made stir in the chocolate chips.
Crush your oreos in a mortar and pestle if you have one (should not be super fine, have some nice chunks) or in a ziplock bag with something heavy if you don’t.

Fold in your Oreos. Make balls about 1 1/2 tablespoon sized and place them on your cookie sheet. Bake for 10-12 minutes before placing them on a wire rack to cool.

*Do not over bake these cookies. They will dry out.
