Recipe || Chocolate Cream Cheese Cupcakes

I know there’s been an influx of new recipe posts lately and I hope you aren’t too bored by it. But it’s because I’ve been so excited to be back in our little kitchen cooking again!
 
I am a lady that loves cupcakes. I would chose a cupcake over a cake or a cookie any day. But I try not to bore Sam by making cupcakes too frequently. But sometimes a girl just needs a cupcake. These work especially well for us because Sam isn’t a particularly huge fan of frosting and these (clearly) aren’t frosted at all.
 
Chocolate Cream Cheese Cupcakes

We ate all these cupcakes in 2 days.
 
 
Ingredients:
(For the filling)
 
8 oz. reduced fat cream cheese, softened
1/3 cup sugar
1 egg
1/8 teaspoon salt
1 cup mini semi-sweet chocolate chips
 
(For the cupcake)
3 cups flour
2 cups sugar
2/3 cup cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
2/3 cups vegetable oil
2 tablespoon white vinegar
2 teaspoon vanilla extract
 

Instructions:

Pre-heat the oven to 350 degrees F.  Line your cupcakes tin with your liners.

Prepare the filling- beat the cream cheese, sugar, egg and salt in a bowl until smooth and creamy.  Stir in the chocolate chips.

Stir together the flour, sugar, cocoa, baking soda and salt in a large bowl.  Add the water, oil, vinegar and vanilla.  Beat for 3 minutes.  Fill muffin cups 2/3 full with batter. Spoon 1 tablespoon of the filling into the center of each cupcake

Bake for 20 to 25 minutes or until toothpick inserted in the cake portion comes out clean.  Let cool for 10 minutes in the pans.  Remove from pans to wire rack.  Let them cool completely.
