Recipe || Sweet Potato Breakfast Hash (Paleo Friendly)

I know I’ve blogged before about breakfast (well brunch because I love to sleep in) being one of my favourite meals of the day. Now I’ve also mentioned how Sam and I recently discovered that we both love cooking and eating sweet potatoes. So this is another installation in my sweet potato breakfast series!
 
Oh, and for those of you who do follow the Paleo Diet, as long as you check your sausage this is a paleo friendly recipe. Course, we had it with toast negating the paleo effect, but oh well!
 
Sweet Potato Breakfast Hash

Ingredients:
 
1 large sweet potato
1 lb pork sausage
1/2 cup chopped yellow onion
4 cloves of garlic, minced
1/2 lemon, juiced
1/4 cup chopped parsley
2 large eggs
salt and pepper to taste

Instructions:

This recipe begins tediously. Peel the sweet potato and grate the entire thing.

 
Cook your sausage until it’s nice and crispy. Remove the excess grease.

I had to threaten Sam to stop him from just eating the sausage at this point.
 
Add the onions to the skillet the sausage used to be in. Cook until they are translucent. Then add in the garlic and stir for several minutes.

Everything starting to come together.
 
Add the shredded sweet potato to the onions and garlic. Cook it, stirring frequently until the sweet potato starts to wilt and brown.
 
Once that’s happened, add the lemon juice, salt and pepper, and sausage and give it a good final stir.

Fry your two eggs quickly. Add the parsley to top as desired.
