Oven Roasted Potatoes with Bacon, Garlic and Parmesan

Sam and I come back from Turkey tomorrow, but in the meantime I’ll leave you with a recipe! It will probably come as no surprise to learn that I love potatoes in any way, shape or form. As does Sam. But I am also always looking for ways to use potatoes differently. Aka not for mashed potatoes, baked potatoes or french fries. Roast potatoes are an English classic, but these have a nice twist from the old standard.

This recipe makes enough for 4-6 servings. Or Sam and I.

(Adapted from My Adventures in the Country)
Ingredients:
1 tablespoon of olive oil
1/2 lb thick, hickory smoked, sliced bacon
3 1/2 lbs potatoes
1/2 cup Parmesan, freshly grated
salt and pepper

Scrub potatoes, and quarter them and then place them in a large pot. Fill pot with water until potatoes are covered by 2-3 inches of water. Bring water to a boil and cook for 12-15 minutes or until potatoes are fork tender. 
Slice bacon strips in half, then cut into 1/2-inch pieces. I cut my bacon prior to cooking. And by I, I mean I gave Sam that job as sous chef.
 
Cook bacon in a skillet until golden, but still flexible. You don’t want it crunchy. Remove cooked bacon onto a plate lined with paper towels. Reserve the bacon drippings.
Check potatoes and if fork tender, drain and allow to cool. I left my skins on, but you could peel them, if desired.
While potatoes are cooling, preheat the oven to 425° and mince the garlic and parsley. Also, grate the parmesan.
Next, prepare the baking sheet by brushing 1 tablespoon of olive oil and half the bacon drippings on the bottom of the pan. I used two pans because I don’t own one large one!
Place cut side down on prepared pan and sprinkle with course salt and fresh ground pepper. Place in 425° oven for 35-40 minutes. Rotate potatoes halfway through the baking time to ensure an even colour. 
Reduce temperature to 375°, turn potatoes over and sprinkle with the bacon, garlic, and parmesan.
Add more salt and pepper if desired. Return to oven for an additional 15-20 minutes or until potatoes are evenly browned and cheese is melted. Remove from oven and serve!

Maybe it’s the Irish lineage in me, but I LOVE potatoes.
