Recipe || Soft Monster Cookies

I love making beautiful cupcakes and cakes, gorgeous tarts and pies; but sometimes nothing is better than the simplicity of a soft, chewy cookie.
Soft Monster Cookies

1/2 cup of butter
1/2 cup of brown sugar
1/4 cup of white sugar
3/4 cup of crunchy peanut butter
1 egg
1 teaspoon of vanilla
1/2 teaspoon of baking soda
1 1/2 cups of flour
3/4 cup of M&Ms
1/2 cup of chocolate chips

Preheat oven to 350 F.

If you stopped right here you’d have some pretty great peanut butter cookies. But we aren’t stopping.

Combine butter and sugars together.  Add in peanut butter and stir again. Then add in your egg and vanilla.

It’s about to get better….

Then mix in the baking soda and flour until thoroughly combined. Fold in the chocolate chips and M&Ms.

Try not to just eat the dough at this step.

Put two tablespoon sized balls of cookie dough on a lightly greased cookie sheet. Press them down gently.

So unhealthy and so delicious.

Bake for 10 minutes. Cool them on the cookie sheet for 5 minutes before transferring to a wire rack. Cool completely or eat warm with lots of milk.

  • Peanut butter, chocolate chips AND M&Ms?? Oh my!! I’m so making these the next time my boyfriend goes away (I always eat stuff with peanut in when he’s away for a while).

    • Is he allergic? If so, poor him! But they’d be perfect for a girls night when he’s away then πŸ™‚ x

      • Yep. Not severely allergic – he won’t actually die if he’s around peanuts – but the symptoms are annoying for him, so I just don’t buy anything with peanuts in when he’s around.

  • So much for my plan to not eat sweets this week, who was I kidding I knew that would never work and after seeing these cookies it will be all I can think about until I satisfy my sweet tooth!

    • As long as you just have a little bit of sugar, it can’t be that bad for you right? But you could make a healthier version substituting in things like oats and greek yogurt! x

  • I can eat so many soft, chewy cookies.. it’s unbelievable. THAT is why I will not be making those amazing looking cookies. But, whenever I do need a good cookie recipe, this is the page I’ll be visiting. Luckily I have your recipe page pinned to one of my home screens on my iPhone for easy access.

    • They are so chewy that it’s almost evil. I have some fairly clean-eating dinner recipes next week though which might be more up you alley. Also I tried to do one of those wall headstand things in my daily workout (which just usually involves some crunches and stretching) and my legs felt like jello afterwards… x

  • I have yet to bake the gingerbread cake as because of the bad weather we have only been doing our grocery shopping at a nearby store that does not have so much to offer – when we can get out to our normal stores, I will be baking it along with these cookies – so delicious!

      • Coping with the weather fairly well, but not really enjoying it too much as I spend most of my time indoors as it is too cold to go outside. Looking forward to the snow going now – it was exciting at first, but when I realised just how cold it was – not so fun! Brrrrrrr!

        • Aww. I’m so sorry. If it makes you feel more positive summers in Ohio can be really hot and humid so you have that to look forward too! (Lots of my family live in Indiana) x

    • Thank you! It’s actually a weird mixture of Smarties (which in the UK are similar to M&Ms) and actual M&Ms, just because they are more expensive than Smarties! x

    • I have to eat some sort of carb for breakfast, even if it’s just toast or else I turn into an absolute crazy person. I’d say that’s the hardest part about traveling with me: if I am hungry my emotions become totally irrational! x
