Key Lime Cupcakes

I don’t know what it is about the summertime that makes me crave zesty-tart desserts, but crave them I do! Maybe it’s due to by constant struggle to purchase or make the perfect key lime pie.
Key Lime Cupcakes

(For the cake)
2 1/2 cups of flour
1 3/4 cups of sugar
1 tablespoon of baking powder
1/2 teaspoon of baking soda
3/4 teaspoon of salt
1/2 cup of powdered milk
1 cup vegetable oil
2 eggs + 2 egg whites (so four eggs but only the whites from 2 of them)
1/2 cup of key lime juice (or regular lime juice)
1/2 cup water
1 teaspoon grated lime peel
(for the frosting)
2 cups of whipping cream
1/2 cup of powdered sugar
1/4 cup lime juice
lime wedges for topping (optional)

Preheat your oven to 350 F. Line your cupcake tray. In a large bowl, shift all your dry ingredients together.  Then mix in the oil, eggs, lime juice, water and lime peel. Stir thoroughly. Your batter will be runner. Fill the cups 2/3 full and bake for 20 minutes.
Key Lime Cupcakes
While the cupcakes are cooling make your frosting. Whip the cream until it has formed soft peaks. (At least 4 minutes.) Add sugar and the lime juice and beat until stiff peaks have formed.
Allow the cupcakes to cool completely before frosting them. Garnish with lime wedges if you wish!

  • These look delicious! I don’t know why, but I’ve always been SO curious as to why it’s called ‘key’ lime pie! Why ‘key’?? But anyhow, they look so delicious and the pictures with lime make them look kind of refreshing in their own way 🙂
