Do you remember when I made the Soft Monster Cookies? Well Sam does, and with his peanut butter obsession he speaks of them fondly. So here’s a new take on them, in cupcakes form!
Monster Cookie Cupcakes
So colourful, so child friendly.
(Adapted from Wishes’n’Dishes)Ingredients: (For the cupcake)1/4 cup butter, softened1/2 cup of peanut butter (I used crunchy)1 cup of sugar2 eggs2 teaspoons of vanilla1 1/2 cups of flour1 1/4 teaspoons of baking powder1/3 cup of milk1 cup of semi sweet chocolate chips(For the frosting)8 oz of cream cheese1/2 cup of butter, softened1/2 cup of peanut butter1 cup of powdered sugar3 tablespoons of brown sugar3 tablespoons of flour1 teaspoon of vanilla1 cup of oats1/2 cup of regular plain m&ms3/4 cup of semi sweet chocolate chips
Instructions:
Preheat the oven to 350 F. Whisk together all the ingredients for the cupcakes except the chocolate chips. After your batter is smooth and fully formed (it should be thick) fold in the chocolate chips by hand. Fill your cupcake tins 2/3 full.
Bake for about 20 minutes.While your cupcakes are cooling start preparing your frosting. Beat together the cream cheese, butter and peanut butter until smooth. Then mix in the brown sugar, flour, vanilla and oats. Then slowly mix in the powdered sugar before folding in the chocolate chips and m&ms by hand. Frost your cupcakes simply by using a large scoop for maximum deliciousness!
I’d say they are so child friendly, but let’s be honest- they are just sweet tooth friendly!
