It’s that time of year again: time for all things pumpkin! Just the way I like it. If you like the looks of this bread, you’ll probably also like my Pumpkin Nutella Swirled Muffins or my Pumpkin Spice Cupcakes.
Ingredients:
3/4 cup of sugar
3/4 cup of brown sugar
1/2 cup of oil
2 eggs
1 cup of pumpkin
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 teaspoon of salt
1/2 teaspoon of nutmeg
1 3/4 cups of flour
1/3 cup of milk
1 cup of miniature chocolate chips
Instructions:
In a mixing bowl beat the sugars, oil, and eggs until creamy. Add the pumpkin and beat again. In another bowl, whisk together the baking soda, cinnamon, salt, nutmeg, and flour. Add to the pumpkin mixture alternately with the milk. Stir in the mini chocolate chips by hand.
Spread the batter in a greased 9×5 loaf pan. Bake at 350 F for 70 minutes. Cool in the pan for 15 minutes, then set on a wire rack to cool completely.
