Thai Sweet Potato Soup

Hello readers! It’s my first post since Christmas and mine was splendid! I’ll tell you more about it later. I’m now battling a cold given to me by some adorable nieces and nephews, and we turned the heat in our flat off whilst we were away so I’m feeding my cold with lots of soup and tons of blankets.

Here’s a favourite soup recipe of mine!

Thai Sweet Potato Soup

Ingredients:

1 teaspoon olive oil
2 cloves of garlic, chopped
1 onion, chopped
1 teaspoon of ground ginger
2 sweet potatoes, peeled and diced
1 celery stalk, chopped
1 teaspoon of lemongrass paste
juice of 1 lime
2 tablespoons of thai red curry paste
1 can of coconut milk (14 fl oz)
4 cups of chicken (or vegetable stock)
salt and pepper to taste
cilantro to garnish

Instructions:

In a large pan, brown the garlic and onions in the olive oil. Toss with the ground ginger. If you have a soup maker add the garlic and onions into your soup maker followed by all the other ingredients. Set to smooth and let the soup maker do its thing.

If you don’t have a soup maker, add the garlic and onions into a large pot with all your other ingredients and bring it to a boil. Then reduce the heat, cover and let it simmer for 20 minutes or until the sweet potato is tender. Then puree.

Once your soup is finished (clearly the easier way in the soup maker is preferable) then salt and pepper to taste and garnish with cilantro. I finished mine off with a dollop of creme fraiche, as well but I’m a glutton like that.
