The first time I ever had an Aperol Spritz it was in the dead of winter. Sam and I were celebrating our 1st Valentine’s Day together, and we were at Polpo long before there was a Polpo on every corner of Central London. I loved it. I sucked down a classic summer beverage in the dead of winter and I was happier for it.
Last summer an Aperol Sprtiz became the “hip” drink of the summer and sales skyrocketed. I blame hipsters who substituted this Italian aperitif for the classic British Pimms. It’s almost dangerously refreshing.
So I’m saying “so long!” to the summer with one last classic warm-weather cocktail.
