Recipes || Coriander Chicken with Avocado

Sam and I try to eat healthily most of the time, but especially when we are in the throws of Bake Off. When I’m baking along every week and have scores of sugar-filled treats floating around the house at all times, it becomes really hard to resist them. So we don’t. But then the trade off is to try not to eat any other sugary things during the week, and to eat nutritiously at lunch and dinner. 

It works most of the time, but meal planning and thinking ahead really makes it easier. Otherwise, come dinner time after a busy day, we are too tempted just to fall back on popping a frozen pizza into the oven. So good, so cheap and so delicious.

Today, I want to bring to you a recipe for  coriander (cilantro) chicken with avocado. 

Coriander Chicken with Avocado

Ingredients: 

1.5 lb. boneless chicken breast
1/4 cup lime juice
1 tablespoons of coconut oil
¼ cup fresh coriander (cilantro)
1/2 teaspoon ground cumin
1/4 teaspoon of paprika
salt and pepper to taste

Avocado topping:
3 avocados, diced
handful of coriander, diced
3 tablespoons lime juice
1/2 tablespoon red wine vinegar
1/2 teaspoon red pepper flakes
1 garlic clove, minced
salt and pepper to taste

Instructions: 

In a small bowl, add the lime juice, coconut oil, coriander. Whisk until mixed. In another bowl mix together the ground cumin, paprika, salt and pepper. Rub your spices all over your chicken. Place them in a dish, and pour your coriander lime juice marinade over top. Cover with cling film and let it sit for at least 15 minutes. (Refrigerated)

Preheat grill to medium high heat (about 205 C / 400 F).

Place chicken on grill and grill each side for 4-6 minutes, until chicken is no longer pink. Remove and let sit whilst you make your avocado topping.

In a bowl, add the avocado, coriander, lime juice, red wine vinegar, red pepper flakes, garlic clove, and salt to a small bowl. Gently mush together, depending on how chunky you like your avocado.

Personally, I prefer mine quite mushed, but Sam likes his chunky.

Top your chicken with your avocado and salt and pepper to taste.
