This is one of my favourite salads to make, so I’m actually shocked that I haven’t blogged about it before. It’s really cool and cleansing so it pairs really well with something a bit more spicy like a curry. (This particular Sesame Carrot Salad I made alongside my saag aloo). 

It’s really light and flavourful, and even someone who claims that they won’t eat carrots will probably enjoy this. (I think it’s something about the carrots being shaved so finely – there’s more surface area for absorption so they really soak up all the acidic lemon flavour.)  

I have terrible eye-sight so my family used to joke that I needed to eat a lot more carrots (which is probably true) but my vision now is so bad that I might as well stick carrots in my eyes than hope for any help from them now. However, carrots help lower blood pressure and are a great source of potassium so they are still definitely worth eating!

Ingredients
  1. 4 large carrots, shredded
  2. handful of coriander, chopped
  3. juice of 1 lemon
  4. 1 tablespoon of sesame seeds
  5. 1 teaspoon of olive oil
  6. 1 teaspoon of balsamic vinegar
  7. 50 g of flaked almonds
Instructions
  1. In a small pan, lightly toast the sesame seeds and almonds. Set them aside to cool.
  2. Toss your shredded carrots with the lemon juice, vinegar and olive oil. Top with almonds, sesame seeds and cilantro.

  • I actually love the sound of this! We had tuna steak for tea the other night and Adam used white and black sesame seeds to cover them – not only did it make them really pretty it tasted great too! I feel as though I’ve never appreciated the humble sesame as much as I could have done! Alice xxx

    • I love sesame seeds (especially on bagels 😉 ) Sometimes when Sam cooks halloumi, he rolls the slices in sesame seeds and then fries them and it’s ace! x

  • Sooo weird but I really dislike grated carrots. Like I love carrots but the texture of them grated irks me. That said, I love carrot salad haha. This seems really good, I feel sesame helps enhance taste in a way!

    • I get it- I have textures that I’m weird about too. Freeze a banana and I’ll happily munch on it cold or in a smoothie bowl but the thought of just eating a banana turns my stomach (only to do with its texture!) x
