I realised going through my draft posts that I’d had this brownie recipe sitting unpublished for ages. Like more than half a year. All baking posts that were drafted before the Bake Off started all got pushed to the side.
I worked on this recipe before I phased eggs out for more plant-based eating, so this recipe does feature 2 eggs. However, they can easily be substituted for a bit of flax seed.
I call these my Healthy-ish Brownie Bites, only because substituting in all the nut butter gives them a protein punch.

Healthy-ish Brownie Bites
Ingredients:
2 eggs
1 teaspoon of vanilla extract
175 g of cashew butter
120 g of sugar
1 teaspoon of baking soda
50 g of cocoa powder
Instructions:
Preheat the oven to 170 C. Line your brownie tin, making sure the sides are well greased.
Mix all your ingredients together in a large bowl. Spread them out into your previously prepared tin. Bake for 20 minutes.
