In the winter, we always end up with a bumper lot of beetroot. Since we try to eat as sustainably and seasonally as possible, beetroot is one of those insanely hardy root vegetables that can almost grow year round. In December, we were up to our eyes in beets. 

We had beetroot curry, beet stew, beets in salads, but my personal favourite (of course!) was beets in a chocolate cake. I fed it to a famously veg skeptic person who said that there was a whiff of healthiness about it, but never would have guessed that it was both filled with vegetables and vegan. 

I chalk that one up as a win. Also this vegan chocolate frosting is amazing. I want to slather everything in it.

For the cake
  1. 1 cup non-dairy milk (I used almond milk)
  2. 150g of dairy-free spread (eg Flora Freedom)
  3. 3 tablespoons of golden syrup
  4. 2 1/2 cups of flour
  5. 3 teaspoons of baking powder
  6. 1 cup of sugar
  7. 4 tablespoons of cocoa powder
  8. 1 teaspoon of baking soda
  9. 250 g of peeled and shredded beetroot
For the frosting
  1. 75 g of nondairy spread
  2. 1 1/2 cups of confectioner's sugar
  3. 4 tablespoons of cocoa powder
  4. 2 tablespoons of water
Instructions
  1. Preheat your oven to 180 C. Grease and line two cake tins.
  2. Stir together all your dry ingredients. Then thoroughly mix in the nondairy butter and milk. Then stir in your shredded beetroot. Divide the batter up between your two cake tins.
  3. Bake for approximately 50 minutes.
  4. Whilst your cake is cooling, make your frosting. Stir all your ingredients together and then frost as desired. This recipe makes enough for the top and middle, so just double the amount if you'd like to frost the sides of your cake as well.
