Sam and I only have a few more weeks in Stratford then it’s back to London for two weeks, followed by 3 weeks in Newcastle and then back to London permanently. (The woes of traveling for work.) That being said, I have been baking away, enjoying this kitchen to it’s fullest because I never know what kind of kitchen we will have when we move back to London permentantly. We were looking at some lovely flats online last night and one beautiful perfect one didn’t have an oven. How is that even an option?
Basically, it’s not. A man cannot live by bread alone. He needs cake too. And these guys:
Ingredients:
(For the Cookie Dough)
(For the cheesecake)
1/2 cup sugar
(For the topping)
1/4 cup dark chocolate chips
Instructions:
In a mixing bowl, beat together the butter and sugars until creamy. Add the eggs and vanilla and beat again. Sift together the baking soda, salt, and flour. Slowly add to the creamed mixture. Stir in the cookie chunks and chocolate chips by hand. Press half the dough into a greased 9×13 pan. Set aside.
In another mixing bowl, beat the cream cheese and sugar until creamy. Add the egg and vanilla and beat again. Pour on top of the dough in the pan.
Crumble the remaining dough over the top of the cheesecake gently. Bake at 350 F for 30 minutes. Remove and place on a wire rack to cool. Refrigerate until completely chilled. Cut into bars.
When the bars have thoroughly cooled melt your two chocolates in separate bowls. Drizzle the dark chocolate over the bars first, and then the white chocolate!
