Dark Chocolate Pistachio Truffles

Happy 1st of May everyone! We are now entering my favourite month (birthday month)! I can’t get enough of pistachios. I just can’t. I wish I was sponsored by some pistachio company brand because it would really save me money. But sadly I am not. However, due to my incessant tweeting of my love for pistachios a pistachio themed account started following me and our exchanges are some of my twitter favourites. That’s really weird, right?
 
This recipe only has 3 ingredients so that’s a definite win!
 
Dark Chocolate Pistachio Truffles

Ingredients:
 
2 cups of dark chocolate
8 oz of cream cheese
1 cup of chopped pistachios
 
Instructions:

Melt your chocolate in a double boiler, and once it’s melted set it aside to cool to room temperature. (I’d advise not using milk chocolate because you’re going to add in a lot of cream cheese which makes makes milk chocolate to milky and not chocolatey enough in my opinion.) When your chocolate is cooled mix the chocolate in with your cream cheese and beat well.

 
Cover the chocolate cream cheese mixture and refrigerate it for up to 2 hours. After it has chilled for 2 hours roll about 1 1/2 tablespoons of the mixture into neat balls and then roll them in chopped pistachios. Set the balls on a lined cookie sheet and refrigerate for another hour.
