Dark Chocolate Pistachio Truffles

Happy 1st of May everyone! We are now entering my favourite month (birthday month)! I can’t get enough of pistachios. I just can’t. I wish I was sponsored by some pistachio company brand because it would really save me money. But sadly I am not. However, due to my incessant tweeting of my love for pistachios a pistachio themed account started following me and our exchanges are some of my twitter favourites. That’s really weird, right?
 
This recipe only has 3 ingredients so that’s a definite win!
 
Dark Chocolate Pistachio Truffles

Ingredients:
 
2 cups of dark chocolate
8 oz of cream cheese
1 cup of chopped pistachios
 
Melt your chocolate in a double boiler, and once it’s melted set it aside to cool to room temperature. (I’d advise not using milk chocolate because you’re going to add in a lot of cream cheese which makes makes milk chocolate to milky and not chocolatey enough in my opinion.) When your chocolate is cooled mix the chocolate in with your cream cheese and beat well.
 
Cover the chocolate cream cheese mixture and refrigerate it for up to 2 hours. After it has chilled for 2 hours roll about 1 1/2 tablespoons of the mixture into neat balls and then roll them in chopped pistachios. Set the balls on a lined cookie sheet and refrigerate for another hour.

  • May is my birthday month too 🙂 You have to try this cookie recipe http://www.pinterest.com/pin/540150549029351220/ and then this pesto http://www.pinterest.com/pin/540150549030192000/ both have pistachios. The cookies are so good that people fight over the last one at parties.

  • Well that’s easy! I would love to try these out. I wonder if Rob is allergic to pistachios… (He’s allergic to a few nuts and A LOT of fruit.) Either way- it sounds like a great excuse to eat pistachios!

    • Oh no! I can’t think of a safe way to test if Rob is allergic to pistachios though. What a bummer! What specific kinds of fruit and nuts is her allergic to? x

      • Nah, he would just try a nibble and see if it made his mouth instantly itchy. It’s a pretty quick reaction with the nuts. Fruit Rob is allergic to: Mangos, cherries, peaches, nectarines, plums, pears, apples.. I can’t think of anything else, but I know that there is more. He’s basically allergic to the BEST fruit..! Poor bugger.

    I was saying to Jan today that there are soooo many May babies! I know two people with babies due in May, my ex-boyfriend’s daughters both have May birthdays (the youngest is one on Saturday and I totally forgot to send her a gift) and another friend’s son will be three at the end of May. And that’s just the under 5s… I also know adults with May birthdays.

    • Haha hurray May babies! Luckily I use Sam’s coffee grinder to crush nuts (shhh….don’t tell!) but before that I used the tried and true method of putting them in a plastic bag and crushing them with a hammer. Which is weirdly satisfying 😀 x

  • i went through a phase when still at school where i could not stop eating pistachios and got all of my friends obsessed as well. we secretly ate them in class and my maths teacher couldn’t understand the shells mysteriously appearing in the bin, haha.. these look so good that i might have to risk it and become addicted again:-) xx
