Recipes || Vegan Peanut Butter Blondies

Blondies are one of those treats that I discovered quite late in life. (Objectively, I know that I am still fairly young). But for someone who is just one big giant sweet tooth, blondies remained pretty off my radar.

I think it was because I (incorrectly!) assumed that a blondie was the same thing as a brownie but with white chocolate. And white chocolate is gross and has no place in my brownie. So if offered a blondie or a brownie, I would have always taken the brownie. And don’t get me wrong, brownies definitely are delicious. But blondies have their place too. The thing that first hooked me on blondies was the “brookie” – a blondie/chocolate chip cookie amalgamation.

They are seriously delicious – I recommend making yourself a batch.

Ever since then, I’ve considered myself a blondie fan. So without further ado, here are my Vegan Peanut Butter Blondies

Ingredients: 

1 cup of coconut sugar
1 cup of peanut butter
2 teaspoons of vanilla
1 1/2 cups of ground almond flour
1 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1/2 cup of almond milk

Instructions: 

Preheat your oven to 200 C and grease your traybake tin.

In a large bowl, stir all your dry ingredients together. Then beat in your peanut butter before pouring in your almond milk and stirring until smooth.

Pour the batter into your tin and bake for 25-30 minutes or until the center is just set. Then slice into bars and serve!
