Wild garlic season runs from March to June in most places in the UK. The leaves are best picked when young and can be eaten fresh or cooked. And if you have picked an absolute glut of it, luckily for you wild garlic freezes.

The easiest way to freeze your wild garlic is to make a wild garlic butter.

Wild Garlic Butter

200g vegan butter or regular salted butter
2 large handfuls of chopped wild garlic

Wash your wild garlic really well and set it aside to dry. Chop your wild garlic. Then blend it in with your butter. Take your butter out and place it on some greaseproof paper. Then use the paper to shape the wild garlic butter into a log. Roll it up in plastic wrap and place it in the freezer. Now when you need wild garlic for the rest of the year for recipes, just slice a bit off your frozen butter and drop into whatever you are cooking.

And that’s the easiest way to keep wild garlic frozen and delicious all year round!
