Ever since Sam and I went
Tynemouth Market and ate delicious, thick brownies from one of the stalls, i have promised to try to recreate them for him. Snickers are Sam’s one candy weakness (whereas I have many) and Snickers inspired brownies are a close second.
Snickers Brownies
Ingredients:1 cup of butter8 oz of semi-sweet chocolate2 cups of sugar2 teaspoons of vanilla extract5 eggs1/3 cup of cocoa powder1/2 teaspoon of salt2/3 cup of flour10 oz of caramel bits1/3 cup of whipping cream1/2 cup of peanut butter1/3 cup of peanuts (plain)
Instructions:
Preheat the oven to 350 F. Line your brownie tray with baking parchment, with bits hanging over the side so that you can use them as handles to lift the parchment (and brownies) out of the tray when finished. In a medium saucepan melt the butter over low heat, stirring in chocolate. When everything is melted and smooth take the saucepan off the heat and stir in the sugar and vanilla. Then add the eggs one at a time.
The batter should become smooth and glossy. Lastly, beat in the cocoa powder, flour and salt. Pour half of the batter into your dish and bake for 20 minutes. Set the other half aside.
Whilst the brownies are baking, mix the caramel and whipping cream in a small saucepan over low heat until smooth then remove from heat. After brownies have been in the oven for 20 minutes, take them out and spread the peanut butter evenly over the top. Then pour the caramel mixture over the peanut butter and smooth it out with a butter knife. Then sprinkle your peanuts over the top.Lastly, pour the remaining brownie batter and spread it. Return the tray to the oven and bake for another 30 minutes. Let the brownies cool completely before slicing them.
I have to say, I do love the sight of neat little lines.
