Happy Pancake Day! Today is my favourite of English holidays- Pancake Day! Instead of Fat Tuesday, it’s Pancake Day in the UK. The idea being that you use up all the good stuff in the cupboard, like butter and sugar, more quickly making something like pancakes so that you won’t be tempted during Lent. But basically any day where pancakes are king is a day for me. 

Your classic English pancake is much more like a crepe than a traditional American pancake (aka fluffy goodness). English pancakes tend to be topped with a sprinkling of sugar and a squeeze of lemon juice. Definitely delicious, but totally different than the maple syrup soaked pancakes that I grew up with. 

I’d never go as far to say that one is better than the other because I don’t believe in pancake discrimination. There’s definitely room for more than one type of pancake in the world (and in my stomach).

In honour of Pancake Day, I wanted to share some of my favourite pancake recipes from years past.

Banana Chocolate Chip Pancakes – these pancakes had zero added sugar until I added a handful of chocolate chips, but who can resist chocolate chip pancakes, right? 

Funfetti Pancakes – These are all your dreams as a kid come true. Essentially. 

Lemon Pancakes with Ricotta – For a more English style take on pancakes, with a delicious twist! 

Red Velvet Pancakes – Because you can never have too much red velvet!
