The second that there’s a chill in the air and the leaves start to change colours, I start craving banana bread. Thick slices warm from the oven slathered with vegan butter….yum!
I buy bananas just so I can make banana bread. I can’t stand the smell and texture of bananas any other way. Get that banana out of my smoothies whilst you’re at it.
But banana bread? That’s a whole other story of deliciousness. It’s basically cake that you can eat for breakfast. And I eat regular cake for breakfast, so it’s great to be somewhat more conventionally acceptable.
Vegan Banana Bread
Ingredients:
1 cup of plain flour
1 cup of spelt flour
2 tablespoons of chia seeds
6 tablespoons of water
110 mL of vegetable oil
1/2 cup of brown sugar
2 teaspoons of baking powder
1/2 teaspoon of salt
1 teaspoon of cinnamon
3 mashed bananas
Instructions:
Preheat your oven to 180C and line and grease your baking tin.
In a large bowl, mix together your water and chia seeds. Let it stand for 5 minutes. In a small bowl, mash together your bananas and set them aside.
In a medium sized bowl add your flours, baking powder, salt, cinnamon and sugar. Mix together.
Add your bananas and oil into your chia seed mixture. Stir quickly together. Then add your dry ingredients into that bowl. Beat thoroughly together. The batter will be quite thick.
Pour the batter in to your baking tin and cook for 35 minutes or until golden brown and cooked through.
