Just in time for Valentine’s Day, I’m coming at you with one of my favourite recipes. This is one of my tried and true cookie recipes that I come back to again and again.
It’s the ideal thing to bring to your special Galentine on Thursday.
Vegan Spelt Chocolate Chip Cookies
115 g of coconut oil
115 g of vegan butter
1/2 cup of sugar
1/2 cup of brown sugar
1 teaspoon of vanilla extract
1/4 cup of oat milk
2 1/4 cups of spelt flour
1/2 teaspoon of salt
1 teaspoon of sodium bicarb
300 g of dark chocolate chunks
Line a baking sheet with greaseproof paper.
Cream together your butter, oil and both sugars. Then stir in the vanilla extract and oat milk.
Then mix in your flour, salt and sodium bicarb. Lastly, fold in your chocolate. Refrigerate your dough for at least 30 minutes.
Preheat your oven to 180 C.
Add a tablespoon drop amounts of dough to the paper. Flatten them slightly. Bake for approximately 8 minutes. Let them cool on the sheet for a few minutes and then transfer them to a cooling rack.
(Or just eat them straight away!)
