Is there anything better than a good fresh pizza? I love that when I have a bit of time (which I do these days) to not use a store-bought sauce or passata but to make my own pizza sauce.

Homemade Pizza Sauce

Ingredients:

2 tablespoons of olive oil
1 small white onion, chopped
2 large cloves of garlic, minced finely
2 tins chopped tomatoes, 400g
3 tablespoons of tomato puree
2 teaspoons of oregano
2 teaspoons of brown sugar
1/2 small red chile, minced finely
1 bay leaf
1 small bunch of basil, finely chopped
salt and pepper

Directions:

Heat the oil in a saucepan over a low heat, then add the onion along with a generous pinch of salt. Fry the onions for 12-15 mins Add the garlic and fry for another minute.

Add in the tomatoes and purée along with the bay, chile, oregano and sugar. Bring it to a boil and lower the heat.

Simmer, uncovered, for 30-35 mins or until thickened and reduced. Season with salt and pepper. For a really smooth sauce, blitz or strain it, but I leave mine as is. 

Take the sauce off the heat and stir in the basil. The sauce will keep for a week in the refrigerator.
