I absolutely adore cauliflower in any way your can serve it, but roasted is definitely a personal preference. Serve it on top this incredible sweet potato mash and drizzle it with a chimichuri and a tahini sauce and you are sure to win over even your favourite meat eaters in your life!
Roasted Cauliflower Steaks with Sweet Potato Mash
For the cauliflower:
1 large head of cauliflower
1 tablespoon of olive oil
1 teaspoon of maple syrup
1/2 teaspoon of salt
1/2 teaspoon of cumin, hot paprika and turmeric
For the mash
2-3 large sweet potatoes
vegan butter
salt and pepper
For the tahini sauce:
1/3 cup of tahini
1/2 teaspoon of garlic salt
3 tablespoons of lemon juice
1/2 teaspoon of ground cumin
4 tablespoons of water
For the chimichuri:
1 small bunch of cilantro
juice of 2 limes
1 red chili pepper
1 tablespoon of olive oil
2 tablespoons of water
3 cloves of garlic
salt and pepper
