Recipe || Chocolate Easter Cake

I was almost about to write “is there any holiday more associated with chocolate than Easter?” And maybe there is (Christmas anyone?) But in my mind chocolate and Easter go hand in hand. 

Easter itself is a pre-Christian holiday celebrating Ostara, Goddess of the Spring, with whom eggs are associated (spring, rebirth, eggs). And then when the Christian calendar was laid over the top of the pagan one, eggs would be saved up over the Lent period, hardboiled, decorated and saved up for consumption on Easter. 

Chocolate eggs burst on to the scene in the early 1800s in France and Germany as an alternative to actual eggs for Easter but the actual origins of the chocolate egg are relatively unknown. And now everyone loves a chocolate egg. (More than 80 million chocolate eggs were sold in the UK last year). I actually grew up Easter egg hunting for plastic eggs in America (which are filled with sweets). So I only had my first proper “English” massive Easter Egg when Sam bought me one during our first Easter together. 

Since all the kids get their chocolate eggs, the adults need something as well (though we all still get an egg, right?) So Easter Sunday lunches are usually capped off with some sort of tasty dessert. I’ve teamed up with Green’s this year to bring you a tasty and beautiful Easter cake that you can make fairly quickly. 

The Green’s kit comes with everything you need to make and decorate a gorgeous Easter cake. It comes with the ingredients for the sponge, the frosting and eggs to decorate. All you need to add are two eggs, some water and a bit of butter. 

The Green’s chocolate cake mix is not vegan as it has trace amounts of milk powder. But as I was making this for family, I wasn’t taking my own dietary needs in to account. However, because I don’t have any dairy in the house, I didn’t actually add the eggs and butter as requested, per se. I used the same amount of butter called for in the recipe with my go-to dairy free butter. And for my egg substitute I used a mixture of flax seeds and water. 

At the moment, if you buy their Chocolate Egg cake kit you also get a box of chocolate mousse for free. It’s long been one of my cake tricks to include a mousse mixture in my cake batters to add extra moisture, and like usual, it worked a trick!
