This was a dish that I whipped up for Sam’s dad when he was staying with us. He has a lot of dietary requirements, so I have to be very mindful when I cook for him. I served this with a side of quinoa which I’m not entirely sure he was very impressed with.

But I suppose what 70+ year old man is going to be impressed with a bowl of quinoa.

Spanish Style Potatoes, Chickpeas and Chard

Ingredients: 

500 g of new potatoes, cut into halves or quarters
1 red onion, diced
2 cloves of garlic, diced
1 tablespoon of rapeseed oil
400 g tin of chickpeas
400 g of chard, stemmed and sliced into ribbons
1 tablespoon of paprika
1 teaspoon of chilli powder
1 teaspoon of white wine vinegar
juice of 1 lemon

Instructions: 

Begin by boiling your potatoes until they’ve gone soft but not mushy. This can take between 15-20 minutes. Drain the water from them and set aside.

Boil your chard for 3 – 4 minutes and also drain and set aside.

Heat up the oil in a large pan. Then add in your onions and saute for around 3 minutes. Next add in your garlic and cook for a further two minutes. Then add in your potatoes and lightly fry them for 3 minutes. Then add in your chickpeas, white wine vinegar and spices. Mix together throughly and cook for a further 5 minutes.

Lastly, add in your chard and lemon juice. You’ll need to give it some muscular stirs to get the chard evenly mixed in and heat it until everything is brought together (2-3 minutes).

Salt and pepper to taste and serve!

Notes: 

I served mine with a side dish of quinoa.
