These cookie bars are only accidentally gluten-free. I made them during a time that I didn’t have any plain flour at home and all the shops were out because of people stockpiling so I used my gluten-free flour.

Gluten-Free, Vegan Cookie Bars

Ingredients:

130 g of dairy-free butter
50 g of caster sugar
150 g of light brown sugar
1 tablespoon of chia seeds mixed with 3 tablespoons of water (left to sit for 15 minutes)
1 teaspoon of vanilla extract
280 g of gluten-free flour
1 teaspoon of bicarbonate of soda
1/2 teaspoon of salt
1 tablespoon of cornflour
200 g of dark chocolate chips (palm oil free, if possible)

Directions:

Preheat your oven to 180C. Line a 9inch baking tray with parchment and grease the sides.

Melt your butter and when it’s cool, stir it together with your sugars. Then beat in your vanilla and chia seed mix. Then stir in your flour, bicarbonate of soda, salt and cornflour. It will take a bit of time to bring it all together as it will seem dry, but keep beating and it will.

Add in your chocolate chips and stir them in. Spread your dough in your baking tray and push it around to make sure it’s smooth and there aren’t any gaps.

Bake for 20-25 minutes or golden brown.
