Recipes || Vegan Lemon Turmeric Cake

Turmeric might not sound like a natural addition to a cake, but I promise that it is an absolutely fantastic taste in a cake. I especially love this cake because it is not too sweet which means that I am justified in eating it for breakfast, right?

Vegan Lemon Turmeric Cake

Ingredients:

215 g of flour (1 1/2 cups)
2 teaspoons of baking powder
1 teaspoon of salt
1 teaspoon of sodium bicarb
3/4 teaspoon of ground turmeric
zest of 1 lemon
juice of 1 lemon
200 g of sugar (1 cup)
180 mL of non-dairy yogurt (3/4 cup)
115 g of vegetable oil

Directions:

Preheat your oven to 180C. Grease or line your cake tin.

Mix your flour, baking powder, salt, sodium bicarb and turmeric together. In a separate medium-sized bowl add your lemon zest. Then add in your sugar and ground the lemon zest into the sugar. Once the sugar is all zesty stir in your lemon juice, oil and yogurt.

Then fold in all your wet ingredients into the dry one. Mix thoroughly together. Pour your batter into your cake tin. Sprinkle 1 tablespoon of sugar on top.

Bake for 50-60 minutes. Cover your cake with tin foil if it looks like the top is browning too much.
