Recipes || Vegan Cinnamon Rolls with Vegan Cream Cheese Frosting

Is there anything better on a slow Sunday morning than a hot cinnamon bun? I definitely don’t think so! These might seem time-consuming but they are relatively simple and worth every second!

Vegan Cinnamon Rolls with Vegan Cream Cheese Frosting

Ingredients:

For the dough:
3 tablespoons of  vegan butter 
1 packet instant yeast* 
1 cup of oat milk
1 tablespoon of granulated sugar
1/4 teaspoons of salt
2 1/2 cups of plain flour

For the filling:
3 tablespoons of vegan butter (melted)
1/4 cup of granulated sugar
1/2  tablespoon ground cinnamon 

For the topping:
2 tablespoons vegan butter (melted)

For the frosting:
3 tablespoons of vegan butter
4 oz of vegan cream cheese
2 1/2 cups of icing sugar
1/4 teaspoon of vanilla extract


Directions:

In a large pan heat the oat milk and vegan butter until warm and melted, never reaching boiling. Remove from heat and let cool. It should be warm but not too hot or it will kill the yeast. (Bath water temperature).

Pour the mixture into your mixing bowl. Sprinkle on the yeast. Let the yeast activate for 10 minutes. Then add 1 tablespoon of sugar and your salt and stir.

Next add in flour 1/2 cup (68 g) at a time, stirring as you go (you may not add it all). The dough will be sticky.

When it has come together, transfer to a lightly floured surface and knead for a minute or so until it forms a loose ball (be careful not to overmix).

Rinse your mixing bowl out, coat it with oil, and add your dough ball back in. Cover with plastic wrap and let rise for about 1 hour or until doubled in size.

On a lightly floured surface, roll out the dough into a thin rectangle (the thickness of the dough should be about 1/4-inch).

Dissolve your filling’s melted butter, cinnamon and sugar. Then brush it on top of your dough.

Then tightly roll up the dough and place seam side down. I used a pizza cutter to cut the roll into ten buns. Place them into a baking dish.

Preheat your oven to 180 C. Whilst your oven is preheating, put the dish with your buns in it on top of the warming oven for another brief rise.

Then bake for 25-30 minutes.

Whilst your buns are baking, making your vegan cream cheese frosting.

Cream together your cream cheese and butter. Then mix in the sugar 1/2 a cup at a time till your desired sweetness. Then stir in the vanilla.

Remove the rolls from the oven and top with your frosting.
