HYKE is a premium English gin that has sustainability in mind, so it is right up my alley. It’s made by Foxhole Spirits and made from fresh table grapes from the English wine harvest. Usually, the equivalent of 1.4 million punnets of fresh table grapes are discarded every year so companies like Foxhole are seeking creative solutions to counter that waste.
Now that you know more about it, on to the big question.
So what’s it taste like?
I thought it was quite crisp and light. The closest thing I can think of to describe it’s flavour is fairly minerally. You can definitely taste the juniper so this isn’t a gin for a non-juniper lover, but to me, the main flavour was cardamom. Since I’m not a professional taster by any means, I was pleased to find out that the botanicals in HYKE were: grape spirit, juniper, myrrh, nigella seed, rooibos, cumin, bay leaf, green cardamom, black cardamom, coriander, angelica root, angelica seed, orris root, liquorice root, aniseed, and lemon zest. So cardamom is indeed a major player in its flavour profile.
I’d recommend keeping this spirit chilling in the fridge. I think it just elevates it a smidge with some more smoothness. It’s a really great gin to pair with a simple tonic.

I think it makes a good gin base for an Elderflower Collins. Here’s my go-to recipe.
Elderflower Collins
Ingredients:
50 ml gin
50 ml elderflower liqueur
25 ml lemon juice
soda water
lemon wedge to garnish, if desired
Directions:
Mix the gin, liqueur and lemon juice in a shaker with ice. Pour into a glass and top with soda water. Garnish with a lemon wedge, if desired.
